Creamy Cucumber Salad Ingredients:
2 medium or four small cucumbers
Half a sweet onion
Splash of olive oil
Splash of white vinegar
2 Tbsp mayonnaise
2 Tbsp sour cream
Salt and pepper to taste
Creamy Cucumber Salad Instructions
Begin by slicing the onions thinly and submerging them in water in cold water to soak while you prepare the remainder of the recipe. Doing this removes any strong onion odor so that your onions will be mild flavored.
Remove the skin from cucumbers. Slice thin or use a mandolin to slice the cucumbers if you have one. Place cucumber slices in a large bowl.
Whisk together the oil, vinegar, mayonnaise and sour cream. Pour over the cucumbers and combine with the onion slices after removing onion from water and draining.
Gently toss everything together. Season with salt and pepper to taste.
Preheat a large skillet on the stove top to medium high. Add the lamb chops. They should begin to sizzle immediately. Let the lamb brown on one side, then flip to the other side. Lower heat to medium and add a few tablespoons of water. Continue to cook on medium for about 4 minutes on each side or until cooked to desired doneness.
Plate and serve along with other sides.
